Recipe: Tapenade Cauliflower-Cashew Crostini

Vegans, on the other hand, tend to disagree with the ethics of eating meat. After abstaining from meat for an extended period of time, the cholesterol and fats are too difficult to digest, which is why they have come up with tasty vegan dishes to whip in minutes. Also, the ingredients are, more or less, available in the kitchen cupboard or can be bought fresh in the market.

The Tapenade Cauliflower-Cashew Crostini is one of the popular vegan dishes in America. Aside from its easy-to-get ingredients, most individuals could prepare this uncomplicated dish without advanced knowledge in cooking.

Furthermore, the dish packs nutrients and minerals that help boost  the immune system and keep your body in great condition. Some of these nutrients and minerals include potassium, fiber, calcium, and iron and folate. Ingredients:

Cream for the Crostini:

  • 1 cup cauliflower florets, steamed
  • 1/8 teaspoon salt
  • 1/2 cup cashews, must be raw and soaked overnight
  • 1/8 teaspoon white pepper
  • 1/2 teaspoon onion powder
  • 1 and 1/2 tablespoons yeast
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon juice, fresh
  • 1 teaspoon mustard
  • water

Tapenade:

  • 1 cup Kalamata olives, pitted
  • 1/8 teaspoon freshly ground black pepper
  • 1/3 cup portabello mushrooms, chopped
  • 1 teaspoon lemon juice, fresh
  • 1 garlic clove
  • 2 teaspoons capers

Crostini:

  • 3 tablespoons chiffonade-cut fresh basil
  • 1 baguette, about 16 slices
    • NOTE: if you’re following the recipe as a vegan, be sure to check the ingredients of the baguette you choose!
  • Balsamic vinegar (optional)

Directions:

  1. Preheat the oven to 350 degrees.

  2. Mix all the ingredients of the Cauliflower-Cashew cream using a clean food processor. Make sure to puree them until they are creamy and smooth.

  3. Put the cream in the refrigerator to thicken and cool. Set aside.

  4. Clean the food processor and prepare the ingredients for the tapenade.

  5. Mix the tapenade ingredients and turn the processor to pulse mode. Pulse until everything gets minced.

  6. Place the baguette slices on a sheet and bake in the oven until toasted. 5 minutes should be enough.

  7. Prepare the crostini slices on a tray.

  8. Using a spoon, transfer at least 2 teaspoons of the cream on top of each bread slice.

  9. Use a clean spoon to top the cream with tapenade.

  10. Garnish the crostini with fresh basil.

  11. Include balsamic vinegar in the crostini serving if preferred.

The crostinis could be served as snacks or appetizers. If you are planning a heavy meal, it is a good idea to have light and healthy dishes to balance the taste as well as the fat. You can experiment with different food combinations to bring out the best flavors of the crostinis. Also, the crostinis are a great introduction to vegetables for children.
