Recipe: Sauteed Shrimp with Arugula and Tomatoes

A very colorful dish, this meal is a flavorful mix of sweet and spicy!


  • Extra virgin olive oil
  • 1 cup of cherry or grape tomatoes
  • 1 clove of garlic (or however much you can handle!), minced
  • 1 pound of large shrimp, peeled and deveined
  • 4 cups ounces wild or baby arugula
  • sea or kosher salt and ground pepper to taste
  • 1 tbsp lemon juice


  1. Heat oil over medium high heat in a large skillet.
  2. Add the tomatoes and cook, stirring frequently, until they start to bubble and blister.
  3. Add garlic and cook until it starts to smell awesome.
  4. Add shrimp and cook, stirring regularly, just until it’s nearly opaque all over, about 4 minutes.
  5. Add the arugula, and salt and pepper to taste. Toss until wilted, just about a minute.
  6. Add the lemon juice last and toss to combine.
