Recipe: Cucumber Lemonade

Nothing says summer like lemonade, right? Amp up the refreshment and the vitamins with this twist on a summer favorite.


(makes 2.5 cups, increase accordingly for a pitcher)

  • 1 cup water
  • ½ cup white sugar
  • 1 cucumber, sliced
  • 6 lemons, juiced (or bottled lemon juice works)


  1. Make a simple syrup by cooking the sugar and water over medium heat in a saucepan, stirring frequently. Heat until just before boiling, and until the sugar has dissolved. Chill in the refrigerator for 30 minutes.
  2. Place the cucumber slices in a blender or food processor until it’s well-blended into a pulp. Pour the pulp over a mesh strainer into a bowl. Let it rest until about 2/3 cup of cucumber juice remains.
  3. Stir the syrup, cucumber juice, and lemon juice in a pitcher. You can also add a few thin slices or small cubes of cucumber and sliced lemon for decoration.
  4. Refrigerate or add ice to chill, and serve.

Since this makes only a small amount of lemonade, you may want to increase the ingredients called for to make a pitcher, or enough for a backyard get-together. However, everyone likes their lemonade different, so this is a good “tester” recipe to figure out how much sugar and lemon juice to use for your taste.
